NOSE: Voluminous. Plush layers of cherry, spice, roasted pecan and dark chocolate.
TASTE: Powerful, deep, rich, juicy plum and blackberry fruit balanced with good tannins and long lingering flavors of coffee, cocoa, sweet oak, vanilla and black cherry. Approachable now. Will improve through 2012+.
TECHNIQUE:. Just 4 barrels were individually selected for this Reserve from our overall 26 barrels of 2004 Cabernet. To be selected the wine must be extraordinarily complex and layered. Hand sorted fruit, fruit destemmed and berries barely broken, 5 day cold soak, wild and inoculated fermentations, all small lot (less than 1 ton) open top fermentors, hand punch downs and pumpovers two to three times daily, malolactic completed in barrel, minimal handling, bottled UNFINED and UNFILTERED. |
