NOSE: Blackcurrant, blackberry, vanilla bean, sweet, toasted oak, and subtle herbal notes - all in excellent balance.
TASTE: Rich and powerful. Deep, blackberry/currant flavors, delicious ripe plum acidity, tobacco leaf, toasted oak, and balanced tannins lead to an incredibly long, complex finish. Exemplifies the terroir of the site. Drinks well now and will improve through 2012+. Decant before serving.
TECHNIQUE: Hand sorted fruit, fruit destemmed and berries barely broken, 5 day cold soak, wild and inoculated fermentations, all small lot open top fermentors, hand punch downs and pumpovers three times daily, malolactic completed in barrel, minimal handling (3 rackings) , bottled UNFINED and UNFILTERED. |
